Sorbates are categorized as calcium sorbate, potassium sorbate and
sodium sorbate. Calcium sorbate is the calcium salt of sorbic acid.
Sodium sorbate is the sodium salt of sorbic acid. Sodium sorbate is a
food additive which is having the E-number E201. Potassium sorbate is
one of the most widely used sub category of sorbate. Potassium
sorbate is industrially produced by neutralizing sorbic acid with
potassium hydroxide. Sorbic acid which is an essential raw material
to manufacture sorbate occurs naturally in some berries however, most
of the sorbic acid required for the production of a wide range of
sorbates is manufactured synthetically.
